FroYo Orange Blossom Lemonade Popsicles

I know I know, I’ve missed #popsicleweek2016!!! How did this happen? And also, where was I? I think I was still on “full-time” mama duty or something like that. By “full-time” I mean that phase when washing your hair requires days ahead of planning, babies get better after a while, they really do and it is so much fun and LOVE!

Or maybe I was on the treadmill “trying” (hoping?) to lose the baby weight?! Doesn’t matter because popsicles are a summer thing and as far as I am concerned it is still summer in London!

I will have to admit that the temperature has gone down this past week but it is still warm *enough* to have a popsicle. I personally could have popsicles all year long. I love popsicles, they’re filled with childhood memories and having one is basically turning into a child allover again. I never know what to do when I get one out of the freezer. Wait for it to soften or take a bite ? I  usually reluctantly wait because my teeth can't handle the cold temperature!

This recipe is easy peasy! It has 5 ingredients (yes only!) and basically consist in mixing all the ingredients together and pouring the mixture into popsicles molds. If you like frozen yoghurt, if you like orange blossom lemonade these popsicles are for you! They’re refreshing, lightly aromatic and tangy!

FroYo Orange Blossom Lemonade Popsicles

INGREDIENTS

Makes 12 popsicles

  • 600g plain greek yogurt (2 cups)

  • 300g caster sugar

  • 240ml lemon juice (juice of 6 to 8 lemons depending on size), (1 cup )

  • 2 tablespoons orange blossom

  • 1 cup citrus marmalade or jam (any type; orange, lemon, grapefruit, etc.)

  • Optional topping: melted dark chocolate and desiccated coconut

METHOD

• In a large container, mix together all the ingredients until you obtain a smooth consistency. Use a blender or a sieve to make sure there are no lumps left.

• Fill each popsicle mold a third of the way up. Transfer one tablespoon of citrus marmalade or jam in each mold. Using a knife, swirl the liquids together in each mold in order to obtain a "swirled" effect.

• Freeze for at least 6 hours before serving. I recommend freezing them over night.

• To serve, run each popsicle mold under hot water and gently remove the popsicle from of the mold.

• Using a fork, drizzle melted dark chocolate on top of each popsicle and top with desiccated coconut. (optional)

Notes

• Directions to melt chocolate:  Chop the chocolate. Place the chocolate and a few drops of water in a microwave-safe bowl stopping and stirring at 15 seconds intervals until smooth and creamy.
